 Dr Eridiong O. Onyenweaku:

Nutritionist and biochemist from Nigeria. She holds a BSc in Biochemistry and a PhD in Nutrition and Food Science. She is a lecturer and researcher at the Department of Biochemistry, Human Nutrition & Dietetics unit, University of Calabar but is currently doing a postdoctoral research with the Food Evolution Research Laboratory (FERL), School of Tourism and Hospitality (STH),UJ. She has keen research interests in Public health nutrition, food science and nutraceuticals and is very passionate about solving nutrition-related health problems. She is married to Steve Ogbonna and they are blessed with three wonderful children – David, Joshua and Rachel.

Dr Thobile Yvonne Bhila 

Holds a PhD Degree in Operations Management with a special focus on waste management and food wastage in the Hospitality industry. She started her studies with a Hospitality Management qualification and there after a Business Administration Degree, Masters and PhD degree in Operations Management. She has been involved with feeding the hungry, meals on wheels community initiative since 2009 and believes in healthy eating. Her research interests are focused in Food Waste Management and how to implement strategies to minimized wastage in the hospitality industry.
